From what I have read this morning, you can get Nokia generic firmware and operator branded firmware. If you flash your device with three's firmware youll get all of three's settings. If you flash with Nokia's youll get all Nokia's settigngs and no brand specific programs.

When I debranded my Vodafone N95 8GB I still had all my Vodafone settings (internet, mms, etc). The settings were probably being read from the sim card. You can usually get your operator to send your settings direct to your phone if you debrand and find some missing.

if you just do a normal update with the nokia updater program the program will find the latest version of the 3 firmware and you'll keep stuff like "Planet 3 softkey", but sometimes there is a newer version from nokia which 3 haven't modified yet. If you need that new version you'll have to debrand yur phone, when you then upgrade with a new version of the firmware from nokia you'll loose your Planet 3 stuff. So if you want to keep Planet 3 and stuff just don't debrand your phone (this is not something you can do accidentally), and you can happily upgrade all you want. Your Firmware is like a pc's OS and a upgrade is like a reinstall of windows, therefore you'll need to make a backup with the nokia backup software before upgrading and then restore the backup after, if you want to keep you messages and calender entries.
